They make our brain perceive spaciousness, due to time delay.
But they also may prepare for the listener's brain intervals such as a 6th, 7th, 9th etc.
If for example echo is subtly applied to a vocal, the repeat blends with the new lyric note. So we have 2 notes together. Also when the repeat takes place (in time) the bass may have already changed too. So a prepared 7th, 9th etc may be created.

Reverb can also create harmony out of single notes.
Without reverb out brain still remembers and perceives the effect of harmony
But with reverb it can be more pronounced.
For example a melodic line close to the begining is:
