It is not cooked except bread so vitamins should be still there.
It is based on top quality bread. The best you can find. Whole grain with no vegetable oil (in the ingredients list that almost nobody reads or palm oil that have a reputation of clogging blood arteries). In fact no oil at all so that the best virgin olive oil can be added by yourself.
Barley or other rusks can also be used which are made without oil.
We moist the rusks until they are like bread.
We add black raisins, cranberries without sugar, almonds, cashews nuts, pistachio nuts, walnuts, whole grain sesame seeds, linseeds, royal dates etc.
Then the best olive oil. Pepper. Oregano. Ceylon cinnamon.
Ready.
Other meals of the day can be:
Salad.
Fresh fruits or juice.
